Soy-Free Peanut Tofu - Jimami Dofu

I went to this is wonderful boutique health event and met some lovely local Japanese vegetable farmers along with all their healthy products. Such as sea grapes (aka vegan caviar) dried veggies, fruit purees and more. I was then introduced to peanut tofu or as they call it; jimami dofu. The locals eat it with a savory sauce as a snack; originated in Okinawa. Famed for its skin beautifying effects and vitamins apparently; I was instantly hooked! I decided to experiment myself with my own ingredients and I have to say it's so lovely and gooey! It's a cross between a tofu and a mochi texture. There is actually no tofu or soy inside it but resembles it well especially if you use white sugar (which I obviously don't). I hope you try it, it's unlike anything I have had before. I also added on some organic purple sweet potato purée for a contrast in flavour. Prep Time: 5 minutes (not including soaking time)

Cook Time: 10 minutes

Set Time: 4 hours


*Ingredients: 

  • Raw plain peanuts
  • Water
  • Pink salt
  • Unrefined sugar
  • Japanese Sake
  • Vanilla bean (optional)
  • Tapioca / potato starch (prebiotic type)

Method: 

  • Soak the peanuts in water overnight or for at least 2 hours
  • Wash and drain, add in fresh water to completely cover the nuts
  • Blend into smooth peanut water
  • Using a nut cloth, strain and squeeze the contents well into a sauce pan
  • Heat on low, add a pinch of salt, splash of sake and 1tbsp sugar per 300ml
  • Using a fine sieve add in the starches - tsp at a time
  • Keep mixing and adding until it has thickened up
  • Spoon into your mold of choice and place into the fridge (you can also do a double strain into the mold)
  • Add your toppings after it has set
