All Natural Green Banana Bread

As the health scenes and allergy awareness boom in every country, I get so many exciting things from all over the world and make recipes from them! I have made several version of banana bread yet as such a requested recipe I’ve decided to switch it up by making it extra nutritious!

Suitable for: gluten free, coeliac, vegan, plant-based, vegetarian, oil-free, salt-free, refined sugar-free, diabetics, HCLF, Paleo,

Ingredients (qty varies to size of dish)

  • Green banana flour
  • Ripe bananas
  • Walnuts
  • Cinnamon / nutmeg / vanilla
  • Plant mylk / water
  • Pure apple sauce
  • Pistachios / Goji berries (topping)

So simple and wonderful! Green bananas contain resistant starch which is great for your overall health and gut!

Green bananas are also high in fibre, potassium, gut-friendly, blood sugar friendly, high in antioxidants and vitamin C! (x35 more than apples)

Refrain from using refined ingredients and processed flours and use something all natural. I always make my own almond flour from homemade mylk so it’s all natural! Using mashed bananas and applesauce is a great replacement for eggs and sugar!

Method

  • Preheat the oven 160°c
  • Combine the dry ingredients
  • Add the wet ingredients
  • Transfer to a lined baking dish
  • Sprinkle with the toppings
  • Cook for 45 minutes
  • Eat hot or cold / keep for 4-5 days in the fridge or on the counter if you don’t live in a humid place

As you can see it doesn’t come out the light because there are NO bleached or highly processed / artificial ingredients. It’s very bouncy and has a crunch from the nuts. A great quick breakfast grab in the mornings. You can also mix in some extra chia seeds or flax meal for an extra boost.
