Raw Brazil Nut Fudge

Hi All, hopefully,  you have seen my other recipe for vegan pomegranate chocolate based fudge This one is a take on a 'white chocolate' version with no actual chocolate inside. Yet it's super indulgent, creamy and filled with healthy superfoods! It's Vegan, Gluten-free, Free from refined sugars and the best part it's a no bake raw recipe!

Prep Time: 20 Minutes

Set Time: 2 Hours

Ingredients:

Fudge-First Layer: 

  1. Raw Brazil nuts
  2. Medjool dates (skinned + pitted)
  3. Raw Coconut oil (optional)
  4. Organic tahini paste

Mid layer: 

  1. Cacao powder
  2. Coconut oil (optional)
  3. Date Paste  

Topping: 

  1. Dried Mulberries
  2. Dried goji berries
  3. White sesame seeds

Method:

  1. Soak the Brazil nuts and dates separately for 10 minutes, keeping the date water!
  2. Combine the rest of the ingredients into a blender and blend until smooth - add in date water if needed
  3. Place the mixture into your mold of choice lined with parchment paper and freeze
  4. Blend the mid layer ingredients together then smooth over the first layer
  5. Sprinkle on the toppings - use anything nice and healthy on hand
  6. Keep it in the freezer till set then slice into bite-sized pieces
  7. It can then be stored in the fridge or freezer
