EASY VEGAN FUDGE!

Hey Friends!

The recipe is finally here! I don’t have the biggest sweet tooth but somehow this is my third vegan fudge recipe because it is just amazing!!! I have been testing this recipe out so it took a while and it is by far my easiest one to create because of the minimal ingredients and prep time needed. I hope you try this one out, i’m not sure if you will be up to sharing it as it’s that good!! I have also linked my other fudge recipes below if you would like to check out a raw chocolaty or blondie version.

This fudge is best kept in the freezer, there is no defrosting needed as it will instantly melt into your mouth, a smooth finish with a slight crunch from the cacao. Its quite important to use a smooth roasted nut / soy butter for better flavour. (if the nut butter doesn’t contain salt then add in a pinch to the mixture for a contrast to balance the final result)

This recipe is: gluten free, vegan, plant-based, grain free, soy-free (optional)

With only four ingredients let’s get started! (Yield 5” x 8” dish)

  • 320g of coconut condensed milk (recommend Natures charm)

  • 3 heaped tablespoons of roasted nut / soy butter

  • 1 tablespoon of coconut oil

  • Handful of raw cacao nibs

Method:

  • Line your dish with parchment paper

  • Into a non stick (not stainless steel) pan add in the condensed milk

  • Keep the heat on low, and simmer for 4-5 minutes

  • Add in the nut/soy butter and coconut oil, simmer for 1-2 minute, combine and even out the consistency with a spatula

  • Sprinkle in the cacao nibs (don’t worry they won’t melt)

  • When the mixture has a give to it and slightly thickened then it’s ready

  • Turn off the heat and carefully pour straight into the mould

  • Cool for 10 minutes then set in the freezer for a minimum of 4 hours before slicing into squares

  • Optional to top with some desiccated coconut and more cacao nibs (if you are serving this up)
